questo tipo di grano \u00e8 pi\u00f9 diffusa: le due variet\u00e0 pi\u00f9 famose sono il pane di Altamura e il pane pugliese, entrambi ottenuti da semola rimacinata.<br \/>\nLa micca con semola grano duro \u00e8 caratterizzato da una crosta croccante e spessa e da una morbida mollica interna e noi vi proponiamo questa ricetta davvero semplice per un risultato che vi class='avia_textblock'   itemprop=\"text\" ><h4>Note e suggerimenti<\/h4>\n<ul>\n<li>Potete consumare la micca con semola di grano duro fresca, che si conserver\u00e0 bene dentro dei sacchetti di carta per qualche giorno, o congelarla e averla a disposizione quando serve.<\/li>\n<li>I tempi indicati di lievitazione potrebbero variare in base alla temperatura dell\u2019ambiente.<\/li>\n<li>Dare LE PIEGHE all\u2019impasto \u00e8 utile per conferirgli maggiore struttura, favorendone la lievitazione. Le pieghe di rinforzo vanno fatte dopo la prima lievitazione e prima della formazione del pane, quindi prima della seconda lievitazione. Create un rettangolo con l\u2019impasto e piegate il lato superiore verso l\u2019interno fino a met\u00e0. Fate lo stesso con il lato inferiore fino ad avere un rettangolo pi\u00f9 piccolo. Pressate leggermente con le mani e portate il lato sinistro verso il centro ed il lato destro a chiudere, proprio come un portafoglio. Se l\u2019impasto lo permette, si possono fare queste pieghe pi\u00f9 volte, per dare maggiore tensione alla maglia\u00a0glutinica. Infine rigirate l\u2019impasto con la chiusura rivolta verso il piano d\u2019appoggio e con le mani dategli\u00a0una forma tondeggiante.<\/li>\n<\/ul>\n<\/div><\/section>\n<div
